I was rummaging through the upper cabinet and came across of nearly useless mini marshmallows. It was time to use them or toss them. POPCORN BALLS!
Make 1/2 cup popped corn. Leave it plain.
I use the stove top Theater Whirley Pop thing with Orville.
Chop 1 cup pecans - not salted.
1 cup UNSWEETENED, shredded coconut. We like Bob's Red Mill best
In large stock pot or dutch oven, melt 1/2 stick butter - not margarine! on low, so it doesn't burn.
Add 1/2 - full bag of mini marshmallows. If you add a full bag, add a bit more butter.
Stir regularly.
Once the marshmallows and butter are mixed well and stringy, add in the popcorn.
Then, toss in the pecans and coconut.
Mix well.
Empty onto cookie sheet and flatten a bit.
Use a spatula to divide it up. Grab the chunks and make balls.
After they cool, we put them in baggies and into the cookie jar.
