Made this yesterday. I wanted a more interesting sidedish than rice, pasta and bread. Almond meal pancakes. I bought the raw almonds at Costco and processed them, with the pealing until they were coarse like meal.
Ingredients:
1 cup almond meal
2 eggs - or four egg whites.
1/4 cup water (for puffier pancakes, you can use sparkling water)
2 T oil
1/4 teaspoon salt
1/2 teaspoon sweetener. (you can also add cumin and chili powder).
Preparation:
Mix ingredients together and cook as you would other pancakes. I like to use a nonstick pan with a little oil. The only real difference is that they won't "bubble" on top the same way as regular pancakes. Flip them when the underside is brown.
I topped it with guac:
3 Hatch chiles (Fred's had them) roasted, pealed, chopped, cilantro, lime, 1 avocado, 1/3 cup red onion chopped.
chunks of Romas or Comparis (Costco again - garden's about done).
Jack cheese on top of the pancakes to melt on them as they are warm.
Great side dish. Enough protein to actually work as a main meal if you have two - REALLY filling.
