Saw some huge good lookin leeks at the farmers market today, so we are making Potato Leek Soup!
We were at a nice Italian restaurant a few years ago, and it was just the little old Italian owners running the place for the night, and it was unexpectedly busy. It was pretty late, and our kids were starving, so they kept on serving us this soup. We must have eaten five or six bowls between the four of us! So when we got home I looked up recipes, and this is the best one I found. It is just SO yummy, we can't get enough of it!
2T olive oil
2T butter
3 large leeks sliced thin
3lbs potatoes peeled and cubed
1 large onion chopped
1 c dry white wine
5 1/2 c chicken stock
3/4 c half & half
*heat olive oil in stock pot
*add butter, leeks and onions (I'm adding garlic to this)
*saute medium heat appx 10 minutes
*sprinkle with salt
*add wine and reduce heat
*add pots and 5 cups of the stock
*simmer 25 minutes
*cool for a bit
*puree in blender (I don't blend it all, leave a little out to add back in)
*add half & half and rest of stock
We add cheese and green onions to this, sometimes bacon bits too.
